Every year on World Oceans Day, participants around the world raise awareness about the importance of a healthy ocean and its inhabitants. In China, Shangri-La Group hotels celebrated the global observation with cooking demonstrations using fresh and sustainable seafood, which contributes to a teeming and balanced marine ecosystem.
On June 20, Kerry Hotel Pudong, Shanghai hosted a sustainable seafood event in partnership with CitySuper, a grocery store chain. Led by Chef Otto, the culinary team led a cooking workshop for 18 attendees featuring Beiyang Jiamei Seafood products that are Marine Stewardship Council-certified, which is in line with Shangri-La Group’s Sustainable Seafood Policy and adheres to the hotel’s Marine Stewardship Council Chain of Council certification. The certification ensures that the ingredients were obtained from a fishery that meets international best practice for sustainable fishing.
Inspired by healthy lifestyles, Chef Otto introduced two sustainable seafood dishes that he specially concocted for the evening – Tom Yam Gong Halibut and Red Wine Toothfish. The onsite cooking demonstration brought exciting interactive engagement to the attendees.
Following the live demonstration, the hotel hosted the Online Sustainable Seafood Recipe Competition, in which the hotel encouraged guests to submit recipes using sustainable seafood. Chef Otto created the dishes and chose five winning recipes.
South of Shanghai in Shenzhen, the talented chefs at Shangri-La Hotel, Shenzhen led cooking demonstrations for media and guests. The chefs created three delicious dishes using MSC-certified sustainable seafood, including a summer salad with Australian tiger prawns, stewed halibut with tomato, fennel and quinoa, and a teriyaki Pollock burger.
While attendees enjoyed the event in person, the hotel invited guests at home to join in the excitement by streaming the event live. Over 5,000 guests tuned into the event and enjoyed learning about the dishes as well as Shangri-La Hotel, Shenzhen’s commitment to sustainability.
