Kerry Hotel, Hong Kong’s Big Bay Café Celebrates A Summer Of Sustainable Seafood

In line with Shangri-La’s Sustainable Seafood Policy and group-wide sustainable food and beverage initiative Rooted in NatureKerry Hotel, Hong Kong celebrates a summer full of sun and sustainable seafood at Big Bay Café from June 1 to June 31. Spearheaded by the hotel’s Executive Chef Matthew Woolford, diners can enjoy fresh seafood from sustainable suppliers across its seven pavilions.

 

Guests can start their journey with freshly-shucked Pacific Oysters upon arrival. Sustainably-sourced, they grow in natural environments, with the supplier validated as a Friend of the Sea from sustainably-recognized Control Union and are Organically Certified by the National Association for Sustainable Agriculture Australia (NASAA). 

 

Diners can continue their journey at the Chill station with items such as ocean trout carpaccio and tiger prawn mango salad.

 

On the outdoor deck, chefs grill and roast a range of seafood dishes on the barbeque with applewood and cherry wood to give a smoky flavor and charred texture. Dishes include a Thai-style grilled ocean trout fillet, grilled whole lobster with garlic herb butter and roasted mussels with fresh pesto.

 

Inside, the restaurant’s Indian Chef has evolved the Stew pavilion with a Malabar tooth fish curry, prawn masala and a spicy Thai stir-fried seafood with herb “pas cha”. The Fry Pavilion highlights include pan-fried hake fillet with sweet soy sauce and wok-fried clams with guiizhou sauce.

 

In the Steam pavilion, the culinary team have worked on a variety of new Chinese and Asian-inspired dishes to include steamed prawn with black truffle, steamed egg with crab meat and steamed hake fillet with preserved vegetables.

 

Dinner prices are HKD648 (about USD83) plus 10 percent per adult and HKD324 (about USD32) plus 10 percent per child ages five to 11 years old from Monday to Thursday. From Friday to Sunday, dinner prices are HKD698 (about USD90) plus 10 percent per adult and HKD349 (about USD45) plus 10 percent per child ages five to 11 years.
