On the island of Borneo in Malaysia, Shangri-La’s Tanjung Aru Resort & Spa, Kota Kinabalu is doing its part through hotel gardening, sustainable fishing and educational efforts.
Keeping it green: Shangri-La’s Tanjung Aru Resort & Spa, Kota Kinalabu’s herb garden is full with sweet basil, mint, kesum leaves, curry leaves, lemon grass, turmeric, pandan wangi, lemongrass and tomatoes. In 2014 alone, the resort harvested 97 kilograms (about 214 pounds) of herbs and vegetables. All of the herbs are used throughout the resort – in dishes and cocktails.
With the help of Kai Nguong Nursery, a local nursery that practices sustainable gardening, and the resort’s organic vegetable supplier, Shangri-La’s Tanjung Aru Resort & Spa, Kota Kinabalu is able to make its own compost using worm casting and bokashi. The nursery also makes mud balls to treat grey water for reuse in the gardens. Because of this partnership, the resort did not have to buy any fertilizer in 2014.
Using their experience with the resort’s garden, the chefs and staff at Shangri-La’s Tanjung Aru Resort & Spa, Kota Kinabalu helped Seri Mengasih, a special development center for the intellectually challenged, and LaSalle, a secondary school, set up their own herb gardens. Once the herbs are ready, the resort will purchase fresh herbs and produce from them.
As Borneo is world-renowned for its stunning ocean vistas, the resort also serves some of the best-tasting fish. As part of Shangri-La’s Tanjung Aru Resort & Spa, Kota Kinabalu’s initiative to save the dugong, a local endangered marine species, the resort purchases sustainably-harvested fish such as groupers, giant trevally and snappers from Kg Berunggus in Kudat. The organization uses the sustainable hook-and-line fishing method to help preserve the grass beds, which is the dugong’s feeding source.
