Properties in Muscat and New Delhi Expand Rooted in Nature Offerings
In 2014, the Shangri-La Group introduced Rooted in Nature as an industry-leading sustainable food and beverage initiative. Four years later, the group continues to encourage hotels and resorts to expand the program to offer dynamic dishes to guests around the world. Guests at Shangri-La Al Husn Resort & Spa, Muscat can relax poolside while enjoying healthy vegetable-based dishes with ingredients procured from Yuzu Brothers organic farm. Headed by Chef Marco De Vincentis, all dishes on the menu are made from ethically-sourced and sustainable ingredients that are delivered daily from the local Omani family-run farm. Along with the organic vegetables and herbs from Yuzu Farm, guests can enjoy sustainably-caught fish and seafood delivered daily to the resort by local fishermen.
“The chefs at Shangri-La Al Husn have worked with the Yuzu Farm brothers to grow the best tasting varieties of organic vegetables, edible flowers & microgreens,” said Caitriona Gaffney, director of communications at the resort.
The resort expanded its work with Yuzu Farm by offering to arrange private tours to the farm for guests of Shangri-La Al Husn Resort & Spa and sister property Shangri-La Barr Al Jissah Resort & Spa, Muscat. During the tours, guests can learn more about the growing process and pick their own items to bring back to the resort for the culinary team to prepare a bespoke meal.
Shangri-La’s – Eros Hotel, New Delhi updated its sustainable seafood offerings at Tamra, the hotel’s all day dining restaurant, by partnering with Hook Catch. The organization focuses on procuring quality seafood using European-grade fishing and farming techniques. The seafood is carefully stored in a temperature controlled environment and handled with care to ensure bacteria-free ingredients. As of October 2018, the hotel has served various shellfish and wild fish sourced through Hook Catch.
“This is only one of many steps taken by the hotel in adopting a sustainable approach to food,” said Mr. Parmeet Singh Nayar, general manager of Shangri-La’s – Eros Hotel, New Delhi. “Hook Catch sources high quality produce that is obtained without harming the environment, while also avoiding species that are deemed endangered or threatened. This initiative is Shangri-La’s – Eros Hotel, New Delhi’s contribution toward building an environmentally-friendly and sustainable culinary landscape.”
